Spicy Jap-Chae????

I am new to this forum. I was stationed in Camp Humphreys for 3 12 month tours (1997, 2000-2002). During my time in Korea I made many Korean firends, most of which were KATUSAs.

One aspect of life at Camp Humphreys that I really miss was eating at the KATUSA Snack Bar nearest the airfield. There was a dish there called Spicy Jap-Chae that was absolutely perfect!

Is this a common Korean dish? If so, could someone please send me some cooking instructions for it?

Thanks in advance and for those American GIs that have not yet tried the food at the KATUSA Snack Bar - you are really missing out!

Hi Garrett! We will ask around. (Chop -Chae) is a popular dish in Korea. Koreans serve it cold.
My wife makes it hot. I think there are two versions of the noodle- one is called Bean Thread Noodle, (clear, like glass)you can get it in any oriental store, and another is a little darker, and made from potatoes. Add soy sauce, hot peppers, onion, shredded carrots, and strips of beef (Bul-Kogi). Everyone look for a recipe from the Katusa Snack bar at the Hump!

Garrett, welcome to the site. I'm am currently a Innkeeper (company SI) I left here in FEB 2000. You know the Black Cats are gone.

Cabby is still here, and alot of other you may know also.

The KSB that you talk of is now gone, a big motor pool is there now.

Im sorry but I will never eat at a Katusa snack bar again. When I was stationed in Yongsan it was disgusting. Ajumma would try the foods with her bare hands and play with the food again. Pigeons would even be flying around in the cooking area..sorry no can do again....try a Kimbap chunguk (sp) or a little place out the gate

Unfortunately, it is impossible to legislate cleanliness on any establishment. The Veterinary service makes a valiant attempt, as do health departments, but they can't be everywhere, and can only make suggestions to eateries outside their jurisdiction.
The Korean culture has never been subject to cleanliness standards as high as in the U.S. Even there, it ain't perfect, as you well know.
Unless people are educated in the world of germs and bacteria, and how to handle food so that the possibility of illness is minimal, you will be at risk.
Recent outbreaks of the Bird Flu not 20 miles from Osan is a reminder of how vulnerable we are.
The good part is that most Koreans, who have not been taught to wash their hands at all, have a built in immunity to some germs.
The bad part is, normally foreigners are vulnerable, as they have not been ingesting evil bacteria for years, and have no such immunity.
I cannot overstress that you should be cautious when eating on the economy. stick with larger establishments, or places where you have seen foreigners eat over a period of time. The street vendors in tents, etc. are OFF LIMITS in most places. May be for cleanliness, or for drunks, I don't know. Just be careful. Most of the ice comes from the Han River. Go figure.
